Ingredients
700 grams of chicken mince
1 small bunch of coriander chopped
2cm piece of ginger grated
1 tablespoon of fish sauce
1 tablespoon of soy sauce
5 kaffir lime leaves chopped
1 stalk lemon grass pale part only sliced
1 onion finely diced
Sauce
1 cup of white vinegar
Sweetener 3 to 4 tablespoons
Toppings
1 small bag of beans sprouts
1-2 cucumber
Method: combine ingredients shape into flat Pattie’s refrigerate
In the meantime combine 1 cup vinegar and 3 tablespoon of sweetener or what ever the equivalent to 4 tablespoons of sugar would be and put on the heat to simmer for 10mins
Slice cucumber diagonally
Assemble sprouts in a bowl top with cucumber set aside
Heat up a cup of refine coconut oil medium to high heat until hot enough to sizzle when you drip mixture in.
Pull out chicken Pattie’s from the refrigerator
Put in as many as Pattie’s fit comfortably in pan and let fry for 4-5 mins then turn over leave another 4 mins and make sure they are golden on both sides remove and let drain on a paper towel
Top the bowls with Pattie’s and spoon over sauce top with some sprigs of coriander and serve
